Practicing organic. 100% Pinot Noir. From a single vineyard directly below Les Crayères in Ambonnay. 60+ year old vine. South facing, with more clay – a perfect site for Coteaux Champenois. Indigenous yeast. Fermented and aged in barrel (30% new) for 22 months. Unfined and unfiltered. Bottled by hand directly from barrel.
